Balsamic Roasted Brussels Sprouts

This pan roasted Brussels Sprouts recipe will forever change the way you look at these little round vegetables. And if my kid loves them, your kids will love them too!

INGREDIENTS:

2 lbs Brussels Sprouts

1/2 cup Olive Oil

1/4 cup Sesame Oi

1 tbsp Sea Salt – to your taste

1 tbsp freshly ground Black Pepper – or more, to your taste

2 tbsp Balsamic Vinegar

 

INSTRUCTIONS:

  1. Preheat your oven to 420°F.

  2. Line a baking sheet with aluminum foil.

  3. Wash the sprouts and cut off the bottoms of each one, then slice lengthwise.

  4. In a large bowl, mix brussels sprouts with olive oil, sesame oil, sea salt and fresh ground black pepper. Make sure each one is thoroughly coated.

  5. Transfer the sprouts to a baking sheet. Arrange in a single layer and roast until they caramelize and become tender, about 20 minutes.
    Caution: If the brussel sprouts are too close together, they will steam instead of roast, which makes them mushy.

  6. Turn and stir the baking sprouts around the 10-15 minutes.

  7. Crank up the heat to 450°F and roast for an additional 10 minutes.
    Caution: Be sure to watch closely during the last few minutes of roasting, as they will brown and crisp quickly and can burn easily.

  8. The next step is place the roasted brussel sprouts back into the large bowl, then toss or mix the sprouts with 1-2 TB of balsamic vinegar. Do your best to evenly coat.

  9. Taste, and if necessary, season again with a little more salt and pepper.

  10. If the brussel sprouts have gone a little mushy I like to throw then back on the baking sheet and roast them for an additional 2-3 min on high to crunch them up again.

The Secret Key to making the Brussel Sprouts super crispy is the High Heat right at the end!

To make Garlic Roasted Brussels Sprouts: Simply add freshly minced garlic after 20 minutes and roast it along with the sprouts on high for the additional 10 minutes.
