Coconut Milk Riced Cauliflower Risotto
This recipe is not only super simple and easy to throw together. But it’s also gluten-free, grain-free, keto-friendly and vegan! I use cauliflower rice with a coconut milk base along with a few simple seasonings. Perfect as the main to your plant-based meal or serve it as a cozy side.

Vegan Buffalo Cauliflower
Here’s a little secret… I really didn’t like cauliflower for a long time. But, if you want to be successfully vegan and ketogenic at the same time, you’ve got to learn to love the cauliflower. I’ve discovered that it is actually an incredibly versatile vegetable! These baked cauliflower bites taste fantastic simply baking in the oven with the buffalo sauce. But… to make them a little bit crispy… there’s no getting around it – these buffalo cauliflower bites taste amazing when they’re breaded!

Last September I gave up drinking coffee every day. I actually went for almost 3 months without a cup! More recently, I started giving myself a little treat now and again, mostly on the weekends, when I can take my time, relax, and really savor the delicious dark nectar. So this is a vegan-friendly, low-carb (Keto approved) recipe to help kick-start your morning routine!
But you might be wondering... What’s the deal with Bulletproof Coffee anyway?
The original Bulletproof Coffee was meant to be used as a replacement for breakfast to help prolong fasting time by postponing your first meal of the day until much later in the morning.
*Pro Tip: If you are trying the Vegan-Ketogenic diet, you will most likely want to include some Intermittent Fasting as well... And this easy breakfast recipe can be a great way to kick-start your day without “breaking the fast”!
In this recipe I also include ways to spice up your morning coffee to give it a little extra special touch!
Plant-Based Cauliflower-Mushroom Mac & Cheese
This is a delicious vegan-gluten-free Mac & Cheese recipe. The fried mushrooms (and broccoli if you choose) is added into the sauce after you blend it to make it smooth. The sauce itself is made with plant milk, cauliflower and cashews (you can also use walnuts). We use gluten-free pasta, but you’re welcome to use whatever pasta you like!
Kheer - A Traditional Indian Dessert
Creamy Rice Kheer, also known as Indian Rice Pudding, is made with 3 simple ingredients: sugar, rice, and milk. It is the quintessential Indian dessert that every Indian child grows up eating. You can flavor it with cardamom, nuts, rose water or saffron to give it a little extra excitement. I like to add cinnamon and clove to mine to spice it up a bit and I also use Maple Syrup instead of sugar for sweetener. I also like to make mine plant-based or vegan, which is very simple to do and very tasty!

Kitchari
Kitchari (also called khichdi or khichri) is a one-pot dish that is a basic staple in Ayurveda. It is very nourishing and easy to digest. It is cooked until it reaches a porridge-like consistency.
Be sure to include the ginger powder to reduce excess Vata or Kapha conditions. Leave out the mustard seeds if you are looking to reduce an excess Pitta problem.
Plant-Based "Parmesan" Replacement
This recipe is super easy and it tastes delicious! I like to add it as a topper to salads, pasta, rice, and well… pretty much anything! It’s not exactly “cheesy” tasting, it carries it’s own flavor and it adds a bit of texture or crunch to other dishes.
Easy Vegan Mac and Cheese
Super simple plant based, vegan mac and “cheese.” This tastes delicious and is easy to re-create.
