Last September I gave up drinking coffee every day. I actually went for almost 3 months without a cup. More recently, I started giving myself a treat now and again, mostly on the weekends, when I can take my time, relax, and really savour the delicious dark nectar.

So here is a vegan-friendly, low-carb (Keto approved) recipe to help kick-start your morning routine!

So what’s the deal with Bulletproof Coffee anyway?

The original Bulletproof Coffee was meant to be used as a replacement for breakfast to help prolong fasting time by postponing your first meal of the day until much later in the morning.

*Pro Tip: If you are trying the Vegan-Ketogenic diet, you will most likely want to include some Intermittent Fasting as well... And this easy breakfast recipe can be a great way to kick-start your day without “breaking the fast”!

Vegan Bulletproof Coffee

  1. Brew your favourite type of coffee

  2. Blend about 1.5 cups of coffee with 2 tsp to 1 tbsp of MCT oil or coconut oil or coconut butter in a high speed blender for at least 30 - 60 seconds, until foamed and frothy.

  3. Pour into a mug and enjoy.

  4. To sweeten with a low-carb sweetener, use a touch of Stevia or Monk Fruit (check your labels to make sure it’s not mixed with other substances).

For a little extra special spicy touch…

Add some or all of the spices below before blending:

1/4 tsp of cinnamon

1/4 tsp of ground cardamon seeds

1/4 tsp of ground nutmeg

1/4 tsp of ground ginger

1/8 tsp of ground clove

1/4 tsp of pure vanilla extract

Why add fat to coffee?

  • You will have more sustained energy throughout the day

  • It helps to neutralize the acidity within the coffee, so it’s better for your gut

  • Adding MCT oil (medium-chain triglycerides or MCTs) and coconut oil (which contains MCTs) to your coffee will help you to feel full longer, which can be an asset if you are practicing Intermittent Fasting, and MCTs have been shown to help burn unwanted fat within the body.
